Look where you want to go, keep your eyes focused on that. Your peripheral vision is actually better at picking up small motions- less acuity, but more sensitive. I see the real hands of a pro on the steering wheel. Small motions, nothing wasted. Any extra motion takes away from your speed and eats away from your tire's traction pie.
I took the pillion with Danny Pridmore around a track, while the speed was awesome (though significantly less than his racing speed), the smoothness was amazing- it was actually quite easy to be a passenger because of his smoothness.
